Is there a difference between anodized and hard anodized aluminum cookware?
Yes. Aluminum is a soft metal. By itself it would not make a good cookware, even though it has great heating properties. The anodizing process electro-chemically transforms the naturally soft aluminum surface into a hard, durable, nearly scratch-resistant surface. Hard anodizing takes the process a step further with additional treatment, making it even harder and more scratch resistant. To add to the complexity of aluminum cookware, popular cookware manufacturer, Calphalon, has introduced a new electro-chemical anodizing process called infused anodized.
