Staub cast iron roasting dishes are available in several shapes and sizes. Those of the same shape nest within one another for space saving kitchen storage. Staub produces a vertical hand roaster, four oval cast iron roasting dishes, and two round roasting dishes. All currently come in the matte black color only. The Staub roasting dishes are restaurant quality, versatile vessels that can cook anything from fish, to meat, to poultry, to vegetables. They are safe in your oven to 500 degrees Fahrenheit. They may be used on your stovetop as well where you can reduce the juices to create flavorful sauces and gravies.
The enamel cast iron keeps warm for a long time out of the oven, as enameled cast iron retains heat while being able to handle acidic foods as well. The matte black enamel finish does not require seasoning, and will only taste better and become increasingly nonstick with every use as the pores inhale oils during the cooking process. This cookware should not be touched with metal objects. Favor plastic, nylon and wood utensils instead. It is extremely durable and chip resistant, but should be treated with care. This cookware should be washed with soapy water, is best used in a slow cooking process at lower heats, and comes with a limited lifetime warranty. The Staub family business began when Auguste Waldner bought a cookware store in Alsace in 1892. When his grandson Francis Staub took over the family business and bought a cast iron plant in 1974, the modern company was born. Today the Staub family business considers itself the undisputed leader in culinary cast iron cookware in France and numerous chefs around the world agree. Joel Robuchon, Paul Bocuse, Thomas Keller, and Jean Joho are all loyal customers who appreciate the company’s hand wrought cast iron cookware and special, traditional manufacturing process in which artisans create one-of-a-kind pieces by hand for every customer. Every single vessel takes an artisan a full day to produce from a unique sand mold that is destroyed upon use. The vessels are fashioned with care, outfitted with ceramic bottoms, and enameled with the company’s characteristic black matte chip resistant coating. Then they’re shipped all across the world.
