The Staub bouillabaisse is an ultramarine (deep oceanic blue) colored five quart oven with an enchanting fish-shaped stainless steel knob. The pot is made for the traditional French stew of the same name although it’s appropriate for creating seafood chowders and many other one-pot meals as well. Staub’s bouillabaisse is highly durable. It’s black matte enamel interior does not rust, is chip resistant, does not require seasoning, and attracts oils into its pores so every time you use it you make it more flavorful and add to its naturally nonstick qualities. The special smooth ceramic bottom is appropriate for any cooking surface.
Since every Staub cast iron vessel is unique, crafted by hand, and enameled inside and out, some irregularities will occur but they should not affect the performance of your bouillabaisse. In order to maintain the look of your vessel, you should exercise special care. For best results, pre-heat the bouillabaisse 2-3 minutes before adding any oil or liquid. Use low to medium heat when cooking and avoid metal utensils in favor of wood, plastic or nylon. To clean, hand wash in hot, soapy water. The bouillabaisse is oven safe to 500 degrees Fahrenheit and has a lifetime limited warranty. The family owned business started modestly when August Waldner bought a cookware store in Alsace in 1892. It really wasn’t until grandson Francis Staub switched from an acting career to take over and purchase a cast iron plant in 1974 that the current cast iron product lines were born. To present day, Francis Staub oversees the design and creation of each piece of cast iron cookware in a manufacturing process that remains very special. Each cookware design is created by Staub himself and patented by the company. The vessels take artisans a full day to produce by hand from unique sand molds that are destroyed upon use. The vessels are fashioned with care, outfitted with a ceramic bottom, and enameled with the company’s characteristic black matte chip resistant coating.
