Emile Henry Flame Top cookware is the first ceramics line developed to go directly into open fires; of which the manufacturing process took five years to develop. The Emile Henry Flame Top line goes into all fires—gas, electric, halogen, and all furnaces both traditional and microwave. It cannot be used on an induction stove, but the line is freezer safe to 0 degrees Fahrenheit. The Flame Top line requires only a low temperature; the natural ceramic material will diffuse the heat by itself. One can steam, bake, stew, or seal in the juices of meats and poultry in this cookware. The cooking process will naturally caramelize, but not burn your food, which is perfect for deglazing.
Emile Henry is a French producer of ceramics founded in 1850. Two hundred craftsmen create their ceramics in Marcigny in Burgundy, France and export their goods to over fifty countries. Items can be purchased in five colors—red, black, green, yellow or figue. They have 24 vessels of different colors offered in several different sizes including 5 1/2, 4.2 and 2 1/2 quart round ovens, casseroles, brasiers, stew pots, roasters, tagines, and fondue sets.
