Calphalon One Infused Anodized Aluminum is made of a proprietary anodizing process that leads to a superior non stick finish without a nonstick coating. Calphalon claims it produces superior results when browning and searing foods. Calphalon touts that steaks, chops and chicken will be caramelized on the outside, tender and juicy on the inside. Sauteing in this cookware should build a rich flavor, and cooking anything in it will provide enough tasty bits of food left behind for deglazing.
Calphalon One Infused cookware is sold in sets of 10 or 8 pieces. One can also buy basics separately (fry pans, sauce pans, stockpots and more) or specialty items separately (defined by Calphalon as items like Dutch ovens, fajita pans, woks, roasters and more). The triple riveted handles stay cool during cooking, and the cookware is safe in your oven and even underneath your broiler. It is not dishwasher safe - hand wash only.

Another reviewer tried to state exactly what one will get in terms of the reaction of the material to food: "Calphalon One is hybrid hard anodized cookware infused with polymer. This is not a nonstick cookware. This cookware has the characteristics of the hard anodized aluminum cookware while the infused polymer provides the nonstick effect (if you use it correctly). It is less sticky than regular anodized cookware." Many reviewers feel knowing that it's not nonstick, and yet is not as sticky as some anodized cookware was a piece of information that would help consumers.
